Paleo Blueberry Pecan Granola.
If you’re like me, snacks aren’t a sometimes, they’re an always. SNACKS. ARE. GREAT.
Popcorn, chips, bars, shakes, crackers, cheese, candy, cookies… basically any form of junk we call “snacks” are providing 0 benefit and a heap of saturated fat, refined sugar and empty calories. There are VERY little nutrients in the snacks listed above, but I understand when we crave something salty or sweet and crunchy.. So here’s how you do that – minus all the crap major brands like to put into their processed packaged items! Ballin.
Remember, snacks don’t have to be processed or come in a bag or a box or from Nabisco or Starbucks… They can and should be healthy choices. If you take 30 minutes one day you have snacks for a whole week! For 1 episode of your Netflix marathons this Sunday make some of this deliciousness and not only will your apartment smell heavenly but your breakfast just got a hell of a lot better and so did your afternoon snack.
Simple & Easy. Here we go!
5 cups Organic rolled Oats
1/4 cup Organic Raw Coconut Oil
1/4 cup Organic Maple Syrup
1/4 cup Orange Blossom Honey
1 cup Organic Dried Blueberries
1 cup Organic Pecans (whole & chopped)
2 tsp Cinnamon
1 tsp Allspice
1 tsp Nutmeg
1 tsp Pure Vanilla Extract
*preheat oven to 325*
1. In a bowl mix all dry ingredients.
2. In separate bowl mix all wet ingredients.
3. Slowly add wet ingredients and use hands to completely mix.
4. on a baking sheet spread mixture flat to ensure it all gets cooked evenly
5. Place in preheated oven and bake for 45 minutes, stirring often.
6. Let cool & dry.
7. Store I air tight mason jars.
Here I used it for a Greek Yogurt parfait. My favorite yogurt is Wallaby’s 0% (read why here) with 2 strawberries sliced and a drizzle of Manuka honey!
